This papad is still made the old way - rolled by hand and sun-dried on cloth mats, leaving behind a faint ചട്ടപ്പാടം (chaṭṭapāṭam, mat imprint) that tells you it was never factory-made.
Crafted from കപ്പ (kappa, tapioca), cut thin and dried slowly under the Kerala sun, it puffs up light and airy when fried, giving you a crunch that’s clean, not oily, not heavy ... just perfectly addictive.
This is the papad served alongside fish curry in coastal homes, or crushed over rice for texture. It’s a daily companion in Kerala, not a fancy side.
Most people have forgotten how this is made. We refused to. Mallu House works with small home producers who still follow this dying tradition ... no machines, no mass drying, no shortcuts.
